INGREDIENTS
ā¢ Rack of Ribs (Iām using baby back here)
ā¢ Binder (Worcestershire works great)
ā¢ Dry Rub
ā¢ Texas Rib Candy and/or Butter (optional)
ā¢ Sauce - BBQ or Hot Sauce (optional)
COOKING INSTRUCTIONS
ā¢ Prep Ribs - remove silver skin, trim fat etc
Optional: I cut these in half to fit onto a
sheet pan
ā¢ Apply binder (Worcestershire, hot sauce,
mustard, oil, whatever)
ā¢ Evenly apply dry rub to rib side, let rest 10min
ā¢ Apply rub to meat side, let rest 10 minutes while
preheating oven to 275* convection setting.
You may consider cooking at 300* if convection is
not an option.
ā¢ Cover baking sheet with tinfoil, place ribs
onto a resting rack (allows air to flow
around ribs)
ā¢ Into oven, center rack
ā¢ Sprits after 1 Hour (water, or Apple Cider
Vinegar, Pom Juice, whatever)
ā¢ Sprits again after 30 minutes
ā¢ 30 minutes - Sprits top, flip, sprits bottom,
back in oven (flipped)
ā¢ 30 minutes - flip & sprits - looking real good
ā¢ 30 more minutes in oven, then apply Texas
Rib Candy (or melted butter mixed with
your favorite dry rub, or both) to meat side
ā¢ 10-15 minutes in oven to set rib candy - then
apply sauce (hot sauce, BBQ sauce,
whatever)
HOME STRETCH!!
ā¢ 10-15 minutes in oven to let the sauce set then rest
for a few minutes and slice!
